Ingredients:

Method:

· Preheat oven to 190C/170C fan and line a large baking tray with baking paper.

· Cream the butter and sugar together in a mixing bowl using a hand mixer or spatula, making sure they are evenly combined.

· Add in the vanilla extract and egg a bit at a time, mixing until smooth before adding any more egg. If the mixture seems to split, mix in a couple of large pinches of flour.

· Then stir in the flour to form a dough. It should not be runny, it should come together in a ball.

· Dust a surface with flour and roll out the dough to a thickness of 1 to 2 pound coins. The thicker it is, the chewier and more cookie-like they will be, whereas if they are thinner they will snap like a biscuit.

· Use biscuit cutters to cut the shapes out of the dough. Reroll any dough left over and use it to cut out more biscuits.

· Bake for around 10 minutes, until they begin to brown around the edges. Make sure you monitor them and check regularly to see how they are baking.

· Cool on a wire cooling rack before icing.

· To make the icing add warm water to your icing sugar, along with your food colouring, until you reach the right consistency. If it is too runny, add in some more icing sugar, and vice versa.

· Ice your biscuits and decorate with sprinkles, and you’re done!
